1 tangerine in quarters
75 g celery
175 g mixed salad
1 handful of raisins
1/5 of lemon, fruit juice & zest
1 C. stevia
1 C. extra virgin olive oil
1 C. tablespoon of walnut oil
Salt and pepper
Peel the apples and cut them into cubes.
Peel the tangerine and use the quarters for the salad
Cut the celery into small pieces.
Sprinkle the apple pieces with half the lemon juice and add the zest.
Cook the walnuts with 1 tablespoon stevia to give them a sweet taste.
Prepare a vinaigrette by mixing the other half of the lemon juice, olive oil, walnut oil, salt and pepper.
Put all the ingredients in a large salad bowl.
